Happy new year! This is the breakfast I started off 2013 with.
I was feeling inspired to start off 2013 with a veggie-filled balanced breakfast. I could have had a bloody mary (and I may or may not have had one later that day while watching the Badgers lose at the Rose Bowl for the third time in a row), but I started off my day and year on healthy note.
When making green smoothies, I think the key is to blend the green leafy vegetable with the liquid and protein powder (if you use powder) before you add the rest of your ingredients. That way the veg is blended in really well and you don’t have to pick pieces of kale or spinach out of your teeth.
Also, if you like pistachios my taste-tester says that this smoothie tastes remarkably like pistachios.
Anyone else start off the new year with a smoothie?
Coconut Almond Kale Smoothie (Printable Recipe)
1 1/4 cup coconut almond milk
1 very large leaf of kale, torn into pieces
2 scoops vanilla protein powder
1/2 cup greek yogurt
1/4 cup unsweetened shredded coconut
splash of almond extract
- Blend the first three ingredients in the blender until smooth.
- Add the remaining ingredients and blend to desired consistency, adding ice if you wish.
- Pour into glasses and top with a bit of shredded coconut.
