This may be the best smoothie I’ve ever made.
Sometimes I get sick of fruity smoothies. This is for those mornings when what you really want is a piece of cake for breakfast.
Almond Butter Chocolate Mint Smoothie (Printable Recipe)
Makes 1 large or 2 small smoothies
2 tablespoons almond butter
3 dates, pitted and chopped
1 scoop protein powder
2 tablespoons unsweetened cocoa powder
2 bananas, fresh or frozen
10 fresh mint leaves
1/4 teaspoon peppermint extract
2 kale leaves, destemmed and torn into pieces
1 1/2 cups almond milk, divided
- Add almond butter, dates, protein powder, cocoa powder and 1/4 cup almond milk to blender. Blend until smooth.
- Add the remaining ingredients and blend to desired consistency. Add more milk if needed.
It’s best to use dates that are still sticky and soft because they blend up much nicer. I find that when you buy them out of the refrigerated section as opposed to bulk bins or off of the dry shelves, they work much better. I have found them in the coolers at Trader Joe’s and Sentry. If you can’t get them refrigerated, make sure you do store them in your fridge once you bring them home. When you are ready to use them in a smoothie, chop them up really well and let them sit in the blender with the liquid for a while before blending.
If you aren’t a minty flavor fan, you can eliminate the mint leaves and peppermint extract. I think this would also be really awesome with coconut flavor or almond flavor and some shredded coconut on top. That’s my coconut obsession trying to make it’s way into everything I eat.
