It’s that time of year…
slightly enormously obsessed with pumpkin and squash. I have about 4 cups of freshly roasted and pureed pumpkin in the refrigerator right now. If you share my love for this orange delicousness be sure to try this smoothie, and check back soon for pumpkin cream cheese muffins. I have been eating the puree by the spoonful though, so hopefully there will be enough left over to cook with.
Pumpkin Pie Smoothie (Printable Recipe)
3/4 cup milk or non-dairy alternative
1/2 cup pumpkin puree (bonus points if you roast and puree a real pumpkin!)
1/3 cup plain Greek yogurt
1 banana (fresh or frozen)
1/2 teaspoon vanilla extract
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon pumpkin pie spice
optional: xanthan gum for thickening, ice cubes and protein powder
- Combine all ingredients in the blender, and process until smooth.
If you really like this recipe, you can freeze individual pumpkin pie ice cubes and always have them on hand. Just spoon your puree into an ice cube tray and let them freeze.
